KILLER 20 MINUTE TOMATO PAN SAUCE

Truth be told… the week was ending and there was no new and fabulous post in sight. Sometimes I write things in advance, but many times, I donut. So I am basically telling ya what I had for dinner tonight. Anyhoo, I have taught this recipe six times to my Cooking Matters classes and each time, everyone raves about how srcum-dilly-umptious and simple it truly is. TZATZIKI, RAITA and some dancing.

I love Tzatziki. I have loved it every since I was a little gal when I would eat it Gyro places at malls (pronounced yee-row). I even used to make it when I actually worked at the Gyro place at the mall in Alamogordo, New Mexico*. We always called it the Greek yogurt sauce or simply “the yogurt sauce”. Strangely enough, even though I made it in bulk at Gyros at the mall, which we called the “hall” cus it was so small, I never tasted home made Tzatziki until I met my great friend Shannon. People wonder why I don’t “review” restaurants on Tasty Bits and I always respond by saying that I like to write about topics that are accessible to all, so I try not to write about restaurants, until now. Trader Joe’s, of course. Some folks feel that Trader Joe’s should pay me to pimp them, but TJ’s doesn’t have to pay people because people have been in love with their brand since day one. In Fact, there are entire cook books and web sites dedicated to Trader Joe’s that are not related to Trader Joe’s at all. Trader Joe’s is not perfect. WHAT IS THE COLOMBIAN HOLY TRINITY?

I once volunteered to design a menu for my favorite Colombian restaurant at the time because all they had was a human sized chalk board in Spanish that they would place on a chair at your table when you sat down.
