My Best Banana Bread Ever

I believe that this banana bread will knock your socks off while also surprising you. It is made with less sugar than the average banana bread bear and uses white whole wheat flour. I adapted this banana bread recipe from the Neiman Marcus “Pure and Simple” banana bread recipe from when women used to wear girdles and panty hose every day.

For most recipes I don’t really specify ingredients much, but since baking is mostly a science, I recommend that you follow my recipe as closely as possible.

Ingredients

4 ripe bananas (if 3 bananas, up the sugar to 3/4 cup)
1 Cup white whole wheat flour
1/2 Cup raw organic granulated sugar
1/3 cup melted good butter
1 Egg room temp (see tip in description)
1 teaspoon + a bit real vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1/4 Cup Guittard Choco chips and walnuts (optional)

Guittard Chocolate chips are a few bucks more than your average package of chocolate chips, but well worth it. The bread will taste good without them, but will be oh so much better with them. *Room temperature egg tip: Place cold egg in some hot water from the tap for 20 minutes to remove the chill.

Dry ingredient exception: I like to mix the raw granulated sugar in with the wet ingredients. I don’t know why.
