VIDEO! HOW TO SECTION CITRUS AND BECOME COOL

I learned to section citrus in Culinary school, therefore, this is a skill that I paid a lot of money for. In those days, we didn’t have YouTube. Sad.

Sectioning citrus is, indeed, a really cool skill to have. Please check out this video and try it for yourself. I learned how to add music to my videos. Tell me what you think!

Here are some ideas on how to apply your new skill!

BREAKFAST: If you want to impress your Valentine, present them with a nice little plate of orange and grapefruit sections. Sprinkle with pomegranite seeds for added romance.

SALADS: Orange sections are a beautiful, tasty and elegant addition to a salad. I sometimes add orange slices to my avocado salad, click here for that recipe. Orange goes beautifully with spinach, arugula, watercress, maché and the list goes on.

VINAIGRETTES: The juice that you reserve in a bowl after you have sectioned your orange is a great in a salad dressing. I use it instead of vinegar and if you need a little more tang, you can add a teaspoon of red wine vinegar.

2 T EVOO
2 T Orange Juice or Lime juice
1 small shallot minced very finely
1 t Dijon mustard
1 t honey (preferably raw)
Sea Salt and freshly ground Pepper to taste
(taste and add 1 t red wine vinager if you need more zing)

    I vote salsa music. Now… can you do the one on the sushi plate where half of it fits back in the shell of the orange peel and the top is all criss-crossy and the pieces come out singularly and evenly with a toothpick!?! Not that I don’t love your citrus sections, you can come over and make me a fruit salad any time!
